2020 Gipsie Jack Chardonnay
Chardonnay is the latest white varietal to be added to the Gipsie Jack range. This Chardonnay is small batch, with only 270 dozen produced.
Viticulture Notes:
The Chardonnay grapes for this wine have come from the only block of Chardonnay we have left in the Meechi vineyard at Langhorne Creek. The vines were planted back in the 1980’s and the vineyard is located centrally in the region, virtually in the township. The soils are free draining, alluvial sandy loam over a red clay layer.
Winemaking:
The fruit was picked as a single parcel. Pressed straight to seasoned French oak barriques before undergoing natural wild fermentation, followed by secondary malolactic fermentation in the same oak. The wine was sulphured in place, left on lees and batonnaged every 2 weeks for 8 months, before being racked out to blend and bottled.
Tasting Notes:
The palate is textured and balanced due to less contact and the barrel aging process but still holds good acidity to give a nice clean finish. This medium bodied wine is dry with a slight hint of oak. Flavours of pear, green apple, hints of citrus and subtle apricot, along with a touch of honeysuckle. Makes an ideal match with matured cheese, and Thai / Asian food. Cellaring - Drink now!
