2021 Gipsie Jack Terrier Shiraz Cabernet
Like the mates behind the Gipsie Jack wine label, The Terrier brings together two varieties that are also great mates. Over the years Langhorne Creek has produced some outstanding examples of this classic Australian red blend. The Terrier Shiraz/Cabernet Sauvignon tips its hat to these historic blends.
Viticulture Notes
Selected parcels of estate grown Shiraz and Cabernet Sauvignon from our 60-year-old vines along with fruit sourced from our local growers was used in the making of this wine. The vines that provided the fruit for this wine, are grown on traditional Langhorne Creek floodplain alluvial soils, as well as from some newer plantings on tighter clays over limestone.
Winemaking Notes
Both the Cabernet Sauvignon & Shiraz fruit for this wine were picked in a number of separate batches, to allow for greater options when blending. All of these parcels were destemed and crushed to small open top fermenters, with the must of both the Cabernet Sauvignon and Shiraz allowed to undergo a 24-hour cold soak prior to fermentation commencing. The wine was then pumped over 2-3 times daily throughout fermentation to extract colour, flavour and tannins prior to pressing to seasoned French and American oak hogsheads. The wine then underwent Malolactic fermentation in oak, prior to maturation in the same barrels until blending and bottling.
Tasting Notes
Deep red/purple in colour, with lifted floral notes coming from the Cabernet Sauvignon along with the usual tarry, briary dark fruit characters and spice provided by the Shiraz.
The palate is layered with dark fruits, savoury vanilla oak & a touch of spice, with fine tannin that sees the wine finish soft round, rich and silky with the Cabernet Sauvignon providing some backbone & length.

Designed for drinking now, but will further develop and reward cellaring for 5+ years
