Viticulture Notes:

This Chardonnay Pinot Noir is a non vintage sparkling wine that is a blend of several vintages. Vineyard sites are carefully selected to en-sure that the fruit they produce has the appropriate flavour and style profiles. Fruit is machine picked at night to ensure cooler tempera-tures and retain fruit aromatics.

Winemaking:

The base wine undergos 100% malolactic fermentation and remains on lees until required for blending and stablilising. The final wine components are then bottle fermented and spend a short period on tirage lees ,providing further yeast complexity in the final wine. Individual vintage components are then carefully selected for the final blend just prior to bottling.

Tasting Notes:

Lifted delicate nose with fresh lemon zest from the Chardonnay and strawberries and cream from the Pinot Noir. There is a softness on the palate, with fresh and fruity undertones, balanced length and great flavor. Cellaring Drink now!
